Caramel Corn

Who doesn't love caramel corn?? It's crunchy and sweet with just a touch of savory. This recipe is sure to please your family, friends, coworkers—and yourself. As someone who has eaten nearly an entire bag of the stuff in one sitting, I'm not one to judge. Watch the video to see how it's made, or skip down straight to the recipe and get cookin'!

Caramel Corn
Makes 20 servings (depending on who you ask!)
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn
Preheat oven to 250 degrees. Prepare popcorn and pour it into a roasting pan. Place the pan of popcorn in the oven to keep warm while you complete the next step.
In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup and salt. Bring the mixture to a boil, stirring constantly. Boil without stirring for 4 minutes. Remove the pan from the heat and stir in the baking soda and vanilla. Pour the caramel sauce over the popcorn in a thin stream, stirring it well to coat the popcorn completely in caramel goodness.
Place the prepared caramel corn in two large shallow baking dishes (or four sheet pans if you have a double oven) and bake in the preheated oven, stirring every 15 minutes, for 1 hour. Remove the caramel corn from the oven and let cool completely before breaking into pieces.
